The WineSellar & Brasserie Unveils New Spring Dinner Menu

SAN DIEGO, CALIF. — April 30, 2014 — The award-winning WineSellar & Brasserie has unveiled a new Spring dinner menu featuring seasonal modern French Cuisine Extraordinaire, according to Gary and Lori Parker, founders of The WineSellar & Brasserie, celebrating its 25th anniversary close to the heart of the Golden Triangle at 9550 Waples Street.

The WineSellar & Brasserie’s Spring dinner menu begins with a choice of Appetizers featuring Yellowfin Tuna Tartare, with lemon, capers, fresh herb, sun dried tomato and crème fraiche; Calamari, with sauce ravigote, olives, caper, tarragon, garlic and tomato; Brasserie Raviolis, with Ricotta cheese, shaved black truffle and oven dried tomato; Seared Polenta Cake, with goat cheese, Cremini mushroom fricassee and black truffle oil; Fromage du Jour, Artisanal cheeses, seasonal jam, toasted walnuts and grilled breads; and Carlsbad Black Mussels, served with creamy white wine sauce, shallots, scallions and roasted tomatoes.

A handcrafted selection of Soups and Salads feature Fresh Asparagus Soup, with goat cheese mousse, black pepper and lemon zest; Beet Salad, with organic beets, Kale, goat cheese fritters and Sherry Vinaigrette; Kale Salad, with almonds, pomegranate seeds and maple vinaigrette; Hearts of Romaine, Percorino Romano, roasted bell peppers and creamy mustard vinaigrette; and Grilled Leg of Lamb Salad, served with wilted spinach, Feta cheese, pine nuts and Pommery mustard vinaigrette.

A dazzling array of entrées feature Caramelized Jumbo Scallops served with tomato concassé, balsamic onion puree and citrus Beurre Blanc; Pan Roasted Salmon, with spring vegetables, turnip puree and citrus Beurre Blanc; Yellowfin Tuna, with oven dried tomato, asparagus, Shiitake mushroom, fingerling potatoes and truffle vinaigrette; Brasserie Fish du Jour, market local catch of the day; Confit of Duck, with black lentil, squash, carrots and sauce Madeira; Duck Breast, with English Pea Puree, daily garden vegetables, blood orange gastrique and orange tuille; Brasserie Risotto, arborio rice, spring vegetables and chive oil; C.A.B. Prime Filet Mignon, potato gratin, daily garden vegetables and Maitre’d butter; Braised Short Rib, served with carrot mousseline, Swiss chard, turnips and red wine sauce; and New Zealand Rack of Venison, pan seared, celery root puree, caramelized apples, brussel sprouts and Huckleberry sauce.
